Sancho Panza is a second generation bloodfiend (read: vampire) from ages and ages ago, and is among the few who actively avoid harming innocent humans despite their intense urges to consume blood. Up until recently, she's been... let's just say "sleeping", and her awakening was rather harsh on her.
By all means, Sancho is a very traumatized and troubled individual, add on top of that the endless hunger which she must keep in check as well as her obligations to a certain company, and you get a person who is desperate to get all that pent up stress out of her system in one way or another... more than likely in a very messy and desperate fashion!
All bloodfiends irrationally fear water, and Sancho is no different, so she's certainly not the cleanest individual. However, being stinky and weird about taking baths is a fair tradeoff for several supernatural abilities that would surely ruin any moods if mentioned! Though, being able to obfuscate herself in darkness is one such feat, a lot of the rest of her arsenal revolves around harm...
